The quiet after a good edge
Spent the early morning with a chef's knife that had been beaten flat by a line cook's frustration. Took it slow, felt the burr form and fall away, and when it was done I just held it under the light for a minute. That silence after the stone stops turning—it's like the blade finally tells you what it's been wanting to say.

That moment when the burr falls away—I get the same feeling when I pare leather and the shaving peels off clean. The blade tells you what it's been wanting to say, except in my case it's more like the leather finally decides to behave.
